Spinach Balls with Tangy Mustard Sauce

Okay so these are literally my favorite appetizer! So delicious and not to hard to make, but I will warn you they are so easy to just pop into your mouth you might eat more then you plan.

Alright here is what you need

2 packages Chopped Frozen Spinach
2 cups  Herb Stuffing
1 cup Grated Parmesan Cheese
Dash Nutmeg
6 Eggs, beaten
3/4 cup Butter or Margarine, softened

*They have to be frozen to cook them so make them in advance.

1) Thaw and drain spinach, make sure you get all the water out.
2) In a bowl mix all ingredients together.
3) Roll into balls, approx 1 1/2 inches in diameter.
4) Put on a pan and freeze until ready to eat.
5) Preheat oven to 350 degreres F
6) Bake for about 12-15 mins until golden

Now here is how you make the delectable tangy mustard dipping sauce for the spinach balls.

Here is what you need:

1/3 cup dry mustard
1/2 cup white vinegar
1/2 cup sugar
1 Egg Yolk

*This needs to be prepped a day in advance.

1) Mix the mustard and vinegar together in a small sauce pan.
2) Cover and let stand overnight on counter.
3) When ready to serve, add the sugar and egg yolk and stir.
4) Put the sauce pan on low heat and simmer until well heated, approx 12 minutes.
5) Now dip away at this delicious appetizer
