what you need:
- 2 cups milk
- 1/3 cup granulated sugar
- 1 cinnamon stick (optional)
- 1/4 teaspoon salt
- 1 cup rice
- 3/4 teaspoon vanilla extract
- 3 ounces dark chocolate, finely chopped
In a saucepan over low heat, bring the milk, sugar, cinnamon, and salt to scalding temperature. Add the rice to the milk and continue cooking, and stirring occasionally, for 20 to 22 minutes, until the rice is creamy. Remove the cinnamon stick from the pudding and discard it. Add the chocolate to the hot rice and stir until the chocolate is melted and thoroughly incorporated into the pudding. Divide the pudding into bowls and serve warm or chilled.
