Brie and Sundried Tomato Dip

I made this dip for a party I had at my house and it was so good! Anything with cheese is good though right? It was nice and easy. So please let me know if you like it.

Here's what you need:
a small oven safe casserole dish or cast iron skillet
2 wheels of brie cheese
1/2 cup sundried tomatos ( I used the Italian seasoned ones again, so easy and no prep)
pepper to taste
1 clove fresh garlic
crostini
olive oil


1) Preheat oven to 350 degrees
2) Remove rind from brie, and cut into cubes
3) Drain the oil from the tomatos, i didnt rinse them because they were already seasoned and I didnt want  to remove it, mince 1 clove of garlic. 
4) Mix it all up and put into casserole dish, top with pepper.
5) Bake for 20-25 mins, Stir halfway through, some oil will be at the top just remove and continue baking. 
6) Cut crostini into small circles, and rub some garlic on one side, put a little olive oil on top of them. 
7) Bake bread for about 7 mins total or until golden brown.
8) Serve with spoon and ENJOY!! 





Delectable Chocolate Covered Strawberries

I had a craving for chocolate covered stravberries so I decided to make some it was suer easy, and might I add the pretty darn delicious. These are perfect for a party or just a fun girls night with friends. I just wipped this together with stuff I had in my pantry.

here's what you need:
1 package of strawberrries
1/2 bag of chocolate chips use whatever kind youd like
unsweetened shredded coconut 
almond peices (or any kind of nut)

1) Put chcolate in a microwave safe bowl (you could use a double boiler if you didnt want to use the microwave). 
2) Microwave in increments of 30 seconds stiring in between until fully melted. 
3) Wash strawberries and dry thoroughly.
4) Dip the strawberries in the chocolate and then if youd like into the coconut or almond. 
5) Place in freezer and let harden for about 20 mins
6) Serve alone or with some whip cream and ENJOY!






  

 

Spinach, Feta, and Sundried Tomato Stuffed Chicken

So let me tell you right now I totally winged this one and it was delicious!   Very easy to do, i paired it with some sauteed peppers.

Here's what you need:
3 Chicken breasts
1/2 cup feta cheese
1/2 cup spinach ( I used frozen)
1/2 cup sundried tomtoes ( I used italian seasoned ones)
To be honest I didnt really measure just mix in a bowl till your happy with the mixture. 
salt, pepper, paprika, Italian seasoning to season the chicken 


1) Preheat oven to 350 degrees
2) Cut a pocket in your chicken breasts, and season the top of chicken.
3) Mix up feta, spinach, and sundried tomatos, into a bowl, I had Italian seasoned tomatoes so I didn't add any other spices, but if you dont add garlic salt and peper if you'd like. 
4) Add mixture into pocket of chicken you can stuff as much as you want into the chicken 
5) Place on baking sheet lined with aluminum foil (for easy clean up)
6) Bake for about 20 mins, or until chicken is done
7) Plate and ENJOY!!

Chilean Sandwich

We had these when I went to Chile and they were fabulous I wish I could make them exactly but I don't have the right beef so I use Turkey, but I'm sure some sirloin or something is similar.  You can use a skinny hamburger bun or something like the one in the photo below. They put avocado on everything, And let me tell you it tastes really good on just about everything!

Here's what you need:

Bread any kind or you can use a skinny bun
Turkey or Beef
Cheese any kind
Mayo
Avocado

1) Toast the bread until crispy (not to brown)
2) Smash up the avocado in a small bowl
3) Spread it onto the toast apply to both halves.
4) Spread the mayo on top of the avocado
5) Add beef or turkey
6) You can add any other toppings you would like (eg. Tomato, lettuce, beets( an Australian favorite), onion)

Skinny Fajitas

I just kind of winged this one and they turned out so good.. Definitely one of my favorites. Also they are healthy yay!

Here's what you need:

1lb of ground turkey
6 mini sweet peppers
1 packet of fajita seasoning 
corn tortillas
fat free sour cream (optional)
salsa (optional)
olive oil
1 tsp cayenne pepper (add more if you want it spicier)
salt and pepper


1) Place olive oil in pan, brown turkey,
2) Wash and cut your mini peppers into circles
3) Drain some liquid out of pan,
4) Add peppers, seasoning, cayenne pepper, and a little salt and pepper.
5) Start warming your tortillas.
6) Add meat mixture to tortillas.
7) Top with sour cream and salsa.
8) Eat and Enjoy!


Total calories: 335 for two fajitas



Turkey Bacon Egg Cups

I found this idea on instagram and yum, the perfect breakfast. They are so simple and delicious.

Here's what you need to make four:

4 eggs
4 pieces of turkey bacon
1/4 cup cheese (any kind you'd like)
salt and pepper to taste
cupcake tray
olive oil


1) Preheat oven to 400 degrees
2) Add some olive oil to pan, and slightly cook turkey bacon in pan.
3) Blot with paper towel and fold into a cup shape in cupcake tray.
4) Add egg to center of cup.
5) Add some salt and pepper, and put some cheese on top.
6) Place in oven for about 14-15 mins or until egg is set.
7) Pop out of cupcake tray.
8) Eat and Enjoy!





Real Fruit Pops

So I have a major sweet tooth but Ive been trying not to eat as many. I decided to make real fruit pops, So easy and so yummy!

Here's what you need

1/2 cup frozen strawberries
1/2 cup frozen bluberries
1/2 can pinnapple
a splash and a half of pinapple juice
1/2 cup water
Blender

1) Add everything into blender and blend until smooth
2) Pour into popcicle containers, or an ice cube tray.
3) Freeze for about 4 hours.
4) Eat and Enjoy!
