Easy Stuffed Peppers

So I recently moved out of my parents house and I have been wanting to start to cook more so that is my plan  :)
Also one of my new years resolutions.
But anyways I have always wanted to try stuffed peppers and I decided to wing it and they turned out amazing!
Alright here's what you need.
Serves 2:
2 Large peppers (any color)
1lb ground beef or turkey
1cup brown rice cooked
1/2cup salsa
1/2cup mozzarella cheese (or whatever you'd prefer)
1 clove garlic
salt and pepper to taste
You can also add more veggies if you'd like I just didn't have many just laying around.

1) Start cooking rice it takes forever so if your on a time crunch just use minute rice
2) When rice is almost done start browning the beef or turkey add garlic salsa a little cheese and the salt and pepper and taste. let sit till rice is completely done.
3)Preheat the oven to 350
4) Cut the top of the pepper off and core, rinse out if needed, dry.
5) Stir in rice to beef mixture, stir.
6) Put mixture into peppers I filled them to the top and a little over, apply cheese to the top.
7) place in oven for about 20-25mins depending on how soft you like your peppers.
8) Cut up and enjoy!
