Budget vegan chickpea curry

Ingredients:
1 small can coconut milk
4 tbs Thai red curry paste
1 can chickpeas
1 can diced tomatoes
1/2 bag frozen spinach
1 tbs garlic powder
Sriracha to taste
Salt and pepper to taste

Note: I had a little bit of frozen corn left in my freezer so I added that as well (totally optional)

Directions:
1. Add coconut milk and red curry paste to large pan.
2. Once at a simmer add chickpeas, diced tomatoes.
3. Bring to boil and then add spinach, garlic powder, sriracha, salt and pepper.
4. Cook for about 5 mins and serve with rice
5. Enjoy!

Juice of The Day

I finally got a juicer! Today I made one and it was super good. I have the black and decker one for those wondering, Nice price and it works really well. 

Here's what I used:
2 apples
3 carrots
2 handfuls of greens
1/2 orange

1) Juice everything andd ENJOY! 


Cauliflower Pizza

I have been wanting to try to make cauliflower crust for a long time now, so I finally ddecided to try it because let me tell you I was suer skepical about it, it just didnt sound that appealing, but it was so good and really pretty easy, However it does take some time. 

Here's what you need:
1 head of cauliflower
1 tsp italian seasoning
1 tsp garlic powder
1 tbs goat cheese, or cream cheese
1 beaten egg
pizza sauce
cheese
desired toppings


1) Place a shallow pot of water with a pinch of salt, on the stove and bring to boil.
2) While the water is starting to boil, cut up cauliflower into smaller peices and put it in food processer and rice it (till it looks like rice) 
3) Put the riced cauliflower into the water and cook for 3 mins.
4) If you dont have a super tiny holed strainer put washcloth in the one you have and strain.
5) bring all the corners of the towel in so it makes a ball where the cauliflower is, if your impatiant like me run some cold water on it so it cools faster.
6) Squeeze the towel till you can't squeeze anymore water out, put squeezed cauliflower in bowl.
7) Add rest of ingredients to bowl and stir.
8) Place on hot pizza stone or a baking sheet lined with parchment paper and bake for 30 mins, or until golden brown.
9) take out and cover with desired pizza toppings and place back in oven for 7-10 mins or until cheese is melted. 
10) Cut into slices and ENJOY!!









Clean Flourless Coconut Waffles

Words cannot explain how delicious these are. The perfect breakfast and so good for you. The are very simple to make, and you can also make them pancakes if you dont have a waffle iron. 

Heres what you need:
1 banana
2 eggs
1tsp vanilla
1tsp cinnamon
1/2 cup of shredded unsweetened cocunut 
1 tbs dark chocolate chips (optional)


1) Turn on waffle iron add some nonstick spray.
2) Mix everything together in a bowl.
3) Add mixture to waffle iron, let cook for about 4 mins
4) Remove from waffle maker,  
5) Put some honey, or peanut butter on top if youd like and ENJOY!!






Clean Mint Chocolate Chip Ice Cream

I have a major sweet tooth but I think I figured out how to get rid of it with this clean mint chocolate chip ice cream, yummmm

Here's what you need:
2 frozen bananas (let sit out a little before making it)
1 handful of spinach
1/2 tsp papermint extract
1 tbs almond milk or water
1 tbs dark chocolate chips

1) Put everything into a blender
2) Blend, put into bowl and add a few chocolate chips to garnish, and Enjoy!







Scrambled Egg Cups

So you guys know how I posted those egg cups with turkey bacon wrapped around them?  Well I wanted to try them again but this time with scrambled eggs and some veggies in it. Whats really nice about these is they stay good in your fridge for about a week so perfect on the go breakfast. 

Here's what you need:
6 beaten eggs
6 mini peppers chopped (you can use big ones too)
1/2 an onion chopped
3 peices of turkey bacon
salt and pepper
some cheese (optional)

1) Preheat oven to 350 degrees
2) Put beaten eggs, into muffin tins only fill half way, season with salt and pepper, mix.
3) Add peppers, onions, and turkey bacon to muffin tins, you can put as little or as much as youd like.
4) Sprinkle a little cheese on top.
5) Put in oven bake for about 15 mins or until eggs are set.  
6) Pop them out of the muffin tins, and enjoy! 



Dinner at the Miscowabic Club

The past few weekends we have went to this local club for dinner, they have an amazing menu with all sorts of gormet cuisine, Im just going to post photos of that I ate and so on. 



French Onion Soup


Filet Minion with wine sauce covered with baked onion rings, garlic mashed potatos, asppargas, and yellow squash.


And for Dessert a Creme Brûlée covered with a strawberry




The next food im going to list is the second time I we went for the appetizer I got the french onion soup again so I didnt picture it here.  Enjoy.

Brie and Sundried Tomato Dip

I made this dip for a party I had at my house and it was so good! Anything with cheese is good though right? It was nice and easy. So please let me know if you like it.

Here's what you need:
a small oven safe casserole dish or cast iron skillet
2 wheels of brie cheese
1/2 cup sundried tomatos ( I used the Italian seasoned ones again, so easy and no prep)
pepper to taste
1 clove fresh garlic
crostini
olive oil


1) Preheat oven to 350 degrees
2) Remove rind from brie, and cut into cubes
3) Drain the oil from the tomatos, i didnt rinse them because they were already seasoned and I didnt want  to remove it, mince 1 clove of garlic. 
4) Mix it all up and put into casserole dish, top with pepper.
5) Bake for 20-25 mins, Stir halfway through, some oil will be at the top just remove and continue baking. 
6) Cut crostini into small circles, and rub some garlic on one side, put a little olive oil on top of them. 
7) Bake bread for about 7 mins total or until golden brown.
8) Serve with spoon and ENJOY!! 





Delectable Chocolate Covered Strawberries

I had a craving for chocolate covered stravberries so I decided to make some it was suer easy, and might I add the pretty darn delicious. These are perfect for a party or just a fun girls night with friends. I just wipped this together with stuff I had in my pantry.

here's what you need:
1 package of strawberrries
1/2 bag of chocolate chips use whatever kind youd like
unsweetened shredded coconut 
almond peices (or any kind of nut)

1) Put chcolate in a microwave safe bowl (you could use a double boiler if you didnt want to use the microwave). 
2) Microwave in increments of 30 seconds stiring in between until fully melted. 
3) Wash strawberries and dry thoroughly.
4) Dip the strawberries in the chocolate and then if youd like into the coconut or almond. 
5) Place in freezer and let harden for about 20 mins
6) Serve alone or with some whip cream and ENJOY!






  

 

Spinach, Feta, and Sundried Tomato Stuffed Chicken

So let me tell you right now I totally winged this one and it was delicious!   Very easy to do, i paired it with some sauteed peppers.

Here's what you need:
3 Chicken breasts
1/2 cup feta cheese
1/2 cup spinach ( I used frozen)
1/2 cup sundried tomtoes ( I used italian seasoned ones)
To be honest I didnt really measure just mix in a bowl till your happy with the mixture. 
salt, pepper, paprika, Italian seasoning to season the chicken 


1) Preheat oven to 350 degrees
2) Cut a pocket in your chicken breasts, and season the top of chicken.
3) Mix up feta, spinach, and sundried tomatos, into a bowl, I had Italian seasoned tomatoes so I didn't add any other spices, but if you dont add garlic salt and peper if you'd like. 
4) Add mixture into pocket of chicken you can stuff as much as you want into the chicken 
5) Place on baking sheet lined with aluminum foil (for easy clean up)
6) Bake for about 20 mins, or until chicken is done
7) Plate and ENJOY!!

Chilean Sandwich

We had these when I went to Chile and they were fabulous I wish I could make them exactly but I don't have the right beef so I use Turkey, but I'm sure some sirloin or something is similar.  You can use a skinny hamburger bun or something like the one in the photo below. They put avocado on everything, And let me tell you it tastes really good on just about everything!

Here's what you need:

Bread any kind or you can use a skinny bun
Turkey or Beef
Cheese any kind
Mayo
Avocado

1) Toast the bread until crispy (not to brown)
2) Smash up the avocado in a small bowl
3) Spread it onto the toast apply to both halves.
4) Spread the mayo on top of the avocado
5) Add beef or turkey
6) You can add any other toppings you would like (eg. Tomato, lettuce, beets( an Australian favorite), onion)

Skinny Fajitas

I just kind of winged this one and they turned out so good.. Definitely one of my favorites. Also they are healthy yay!

Here's what you need:

1lb of ground turkey
6 mini sweet peppers
1 packet of fajita seasoning 
corn tortillas
fat free sour cream (optional)
salsa (optional)
olive oil
1 tsp cayenne pepper (add more if you want it spicier)
salt and pepper


1) Place olive oil in pan, brown turkey,
2) Wash and cut your mini peppers into circles
3) Drain some liquid out of pan,
4) Add peppers, seasoning, cayenne pepper, and a little salt and pepper.
5) Start warming your tortillas.
6) Add meat mixture to tortillas.
7) Top with sour cream and salsa.
8) Eat and Enjoy!


Total calories: 335 for two fajitas



Turkey Bacon Egg Cups

I found this idea on instagram and yum, the perfect breakfast. They are so simple and delicious.

Here's what you need to make four:

4 eggs
4 pieces of turkey bacon
1/4 cup cheese (any kind you'd like)
salt and pepper to taste
cupcake tray
olive oil


1) Preheat oven to 400 degrees
2) Add some olive oil to pan, and slightly cook turkey bacon in pan.
3) Blot with paper towel and fold into a cup shape in cupcake tray.
4) Add egg to center of cup.
5) Add some salt and pepper, and put some cheese on top.
6) Place in oven for about 14-15 mins or until egg is set.
7) Pop out of cupcake tray.
8) Eat and Enjoy!





Real Fruit Pops

So I have a major sweet tooth but Ive been trying not to eat as many. I decided to make real fruit pops, So easy and so yummy!

Here's what you need

1/2 cup frozen strawberries
1/2 cup frozen bluberries
1/2 can pinnapple
a splash and a half of pinapple juice
1/2 cup water
Blender

1) Add everything into blender and blend until smooth
2) Pour into popcicle containers, or an ice cube tray.
3) Freeze for about 4 hours.
4) Eat and Enjoy!


Garlic Tofu

Sorry I haven't posted in a long time, but today I have a few recipes I'm going to post for you today..Alright so I recently made some yummy garlic tofu it was so good! And usually tofu doesn't taste like much but this was great.

Here's what you need:

1lb of extra firm tofu
1 cup of rice
5 green onions
2 tbs olive oil
1/4 cup hoisin sauce
2 tbs soy sauce
3 cloves of garlic minced

1) In a bowl add the hoisin sauce, soy sauce and garlic, mix.
2) Dry the tofu, and then cut into cubes, add the the sauce.
3) Let marinate for at least 30 min (the longer the better) in the fridge.
4) After letting it marinate, add olive oil to pan and then the tofu, let cook for 5 min on one side then turn.
5) While cooking tofu cut the green onions, add to pan, and finish cooking the tofu
6) You can make raw rice but I just made minute rice (way faster).
7) Put rice on plate and add tofu on top.
8) Eat and Enjoy!

Strawberry Shakeolgy

The strawberry shakeolgy is my least favorite flavor, I needed to do something to make it more enjoyable and i whipped up this super yummy treat.

Here's what you need:

blender
1 scoop of strawberry shakeolgy
1 tbs of peanut butter
1/2 cup of yoplait vanilla yogurt
4 almonds
4 ice cubes
1 tbs nature valley granola (oats n dark chocolate)
and a little water


1) Add everything to blender
2) Blend and enjoy!


Easy Basic Chicken

This is just a basic chicken recipe. I mainly cook my chicken this way and it's very easy. 

Here's what you need:

Chicken breasts 
Some paprika 
Onion powder
Parsley flakes
Salt and pepper
Olive oil

1) Put the olive oil in the pan and then the chicken. 
2) Season the top side. 
3) Cover and depending on the thickness of the chicken cook for about 12 min on each side. 
4) Flip and season other side, cover and continue cooking. 
5) Serve alone or I had pasta with olive oil and Parmesan. 
6) Eat and enjoy!







Delicious Cutie Parfait

So today I was thinking of what snack I was going to make for work today, I'm getting really sick of granola bars so I decided to make a parfait! I only had oranges so I made it work, but you can use any fruit really. It was absolutely delicious very light and yet sweet, and crunchy I highly suggest this! 

Here's what you need

1/2 cup vanilla yogurt (or what ever flavor you'd prefer)
2 tbsp of granola I used nature valley oats and dark chocolate 
1 cutie orange
1 spoonful of the sugar free whip cream I blogged about or you can use store bought

I used a gelato cup so that's what I used to stack it in. 

1) Put the yogurt in.
2) Put the granola.
3) Peel and layer the cutie.
4) Then top of off with whip cream.
5) Eat and enjoy! 



           It's just in a gelato container.

Wine, Cheese, and Fruit night

So last night me and one of my best friends got together and had a wine, cheese, and fruit night and it was fabulous! Here's what we had

A mini wheel of Brie cheese
Laughing cow spicy pepper jack cheese wedges
Feta cheese
New York bagel crisps in roasted garlic and plain
Gala apples
Seedless red grapes 
2 pears 
And a bottle of Pinot Grigio

It was so much fun if you ever want to get together with your friends I highly suggest this party tray, or even of your just having guests over this is a great way to entertain.

Cooked Spinach

I was looking in my fridge the other day and I noticed that the spinach from my quiche was still in there and it started to wilt a little bit, but I didnt want to waste it so I figured iIl make some cooked greens with it! 

Heres what you need

1 tsp olive oil
1/2 bag of spinach
1 spoonful minced garlic
salt and pepper to taste

1) Put some olive oil in the pan 
2) Add the spinach, and garlic salt and pepper
3) Cook until condenced
4) Eat and enjoy!
